Preparation

- Cut the chicken into thinner pieces horizontally, or pound them out a bit so they’re thinner.
- Season the chicken filets with Cajun seasoning. Heat the oil in a skillet over medium-high heat (I use a nonstick for this). Sauté the chicken on each side for 3-4 minutes, until the internal temperature reaches 165 and the outside is golden; remove from the pan and set aside on a plate.
- Wipe off any overly browned bits from the pan. Turn the heat to medium-low so the butter and shallots don’t burn. Add butter and shallots; saute until softened and fragrant.
- Add tomato paste and Cajun seasoning; saute for 3-4 minutes until the tomato paste has developed a rich color. Add flour and mix; cook for 2-3 minutes to remove any floury taste.
- Add broth gradually; whisk to incorporate after each addition. Once it’s smooth, add heavy cream and whisk again to incorporate. Let it simmer for 5-10 minutes to thicken slightly. Add chicken back to the pan so it is partially submerged with sauce.
- Serve pieces of chicken with a spoonful of the sauce over the top. I love this SO MUCH with mashed potatoes and broccoli – see notes!
- Air fry at 375 for 10-12 minutes, or until at least 165 degrees internal temperature.
- Toss 3-4 cups halved baby potatoes with avocado oil and salt on a sheet pan. Roast the potatoes at 425 for 15 minutes. Scoot the potatoes over, add 3-4 cups broccoli and ¼ cup water to the same sheet pan, and roast for another 15 minutes.
- Toss 2 cups halved baby potatoes with avocado oil and salt. Air fry at 375 for 12 minutes. Add 2 cups frozen or fresh broccoli; air fry at 400 for another 10-12 minutes.

Tips
Making Chicken with Cajun Sauce that is tender, flavorful and perfectly seasoned depends on an important cooking methods. Here are the best tips to improve your dish whether you are pan-searing, baking or preparing meals ahead:
1. Meat Preparation & Seasoning
- Pound to Equal Thickness: Chicken breasts often have thicknesses. Put them between two sheets of plastic wrap. Gently hit the thicker parts with a mallet or rolling pin. This helps the whole piece cook evenly without making the thinner parts dry.
- Dry Before Seasoning: Always wipe the chicken dry with a paper towel before adding oil or spices. Water creates steam, which stops the meat from getting a flavorful golden-brown outside.
- Season Generously & Early: Cover the chicken completely with your Cajun spice mix. Let it sit at room temperature for 10 to 15 minutes before cooking. This helps the salt and spices get into the meat a little.
2. Cooking the Chicken
- Use High-Heat Oil + Butter: Cook the chicken using a mix of a high-smoke-point oil (like canola or avocado oil) and a small piece of butter. The oil stops the chicken from burning at temperatures while the butter adds flavor and helps the meat get golden.
- Don’t Overcrowd the Pan: Cook in batches if needed. Much chicken in the pan lowers the temperature and makes the meat steam instead of sear.
- Watch for Spice Burning: Cajun spices ( paprika and chili) can burn quickly if the heat is too high. Start with high heat for the first sear, then lower to medium to finish cooking.
- Use a Meat Thermometer: Take the chicken off the heat when the inside reaches 165°F (74°C). Let it rest for 5 minutes before cutting so the juices stay inside.
3. Crafting the Perfect Cajun Sauce
- Deglaze the Pan (Fond = Flavor): After cooking the chicken leave the browned bits (in the pan. Add a splash of chicken broth, white cooking wine or a squeeze of lemon juice and scrape the bottom of the pan with a wooden spoon. This adds a flavor to the sauce.
- Add Aromatics First: Sauté chopped garlic, shallots or bell peppers in the pan juices for 1 to 2 minutes before adding liquids.
Sauce Consistency:
- Creamy Sauce: Add cream, half-and-half or cream cheese. Lower the heat to a simmer so the cream doesn’t break or get lumpy.
- Lighter Sauce: Use chicken stock mixed with a teaspoon of cornstarch slurry then finish with a piece of butter off the heat (emulsification).
- Balance the Heat: If the Cajun blend makes the sauce too spicy add a splash of lemon juice a dash of Worcestershire sauce or a pinch of brown sugar or honey.
4. Serving & Pairing Ideas
- Garnish Fresh: Finish the dish with chopped parsley, green onions or a final squeeze of fresh lemon to cut through the richness of the Cajun spices.
- Great Sides: Serve Cajun chicken and sauce with:
- Steamed white or jasmine rice / Cajun rice
- Fettuccine or penne pasta (, for a Cajun chicken pasta)
- Roasted green beans, broccoli or pan-charred zucchini
